Jackson's Party

Saturday we went to Jackson's 3rd birthday party. It was at his house and there were a couple baby pools and a swingset and sandbox and trampoline...what more could a group of 2 and 3 year olds need? They had a great time playing and the oreo cake was amazing :) Ellie couldn't go because it was naptime but Emmie had a BLAST with all her friends and she was alseep within 5min of getting back home!

Playing Catch Up

The title of this blog kind of feels like the story of my life right now but that's a whole other blog entry!
So let's see...what have we been up to? Well last week on Wednesday afternoon Emmie started running a fever...of course I was scheduled to work Thursday and Friday. Luckily Kristi was sweet enough to come in and work for me for a few hours on Thursday so I take Emmie to the doctor. I had to beg, steal, borrow and threaten to bring a 2yr old and a 9mo old to sit in the waiting for 2 hours hoping to get squeezed in...miraculously enough when I got to the doctor's office they had a spot for us...it was self-preservation on their part...haha! After talking my 2yr old into peeing in a cup (she did amazingly well) and letting them "tickle" her throat (did I forget to mention to her that it was more of a gagging then a tickle?) for a strep test she was diagnosed with a viral something...at least no finger prick this time! She ran a low grade fever Thursday afternoon and has been fine since then. Of course she and Ellie missed My Gym class so we spent this week making up classes for both girls.
We were supposed to go to Summerville but after leaving the doctor on Thursday I decided we would just stay at home and let Emmie get some rest. On Saturday evening we went to a birthday party for Arlie, Gabriel, and Jackson who go to our church. It was at Arlie's house and the kids all had a great time!

Emmie got her face painted for the first time! She's a little kitty cat! She wasn't so sure about it at first but once she watched her friend Evelyn get her face painted Emmie decided she would give it a try too!

We did our normal stuff Sunday and Monday and then on Tuesday we went to Edventure with the Mom's group. We had a great time. I've been in kind of a stressed out, overwhelmed, funk lately and Emmie's going through a whiney, not listening faze so a morning of fun and play was what we all needed. The girls both had a great time and I brought lunch for them to eat in the car so they stayed awake on the way home and both took good naps when we got home...yay!

My mom came Wednesday and I got to run some errands by myself and then Emmie and I went to My Gym for her makeup class. She always enjoys getting some one on one time and it was nice to be able to give her all my attention.
We have a few trips and other craziness coming up in the next month but this week at least I feel like I'm catching up a little!

SUYL - Making New Friends

Today on Kelly's Korner the topic is making new friends! It's all about connecting with other bloggers who live in the same area as you so this post is going to be about me!



Hi! I'm Stacy and I live in Columbia, SC. I was born in Greenville, SC and have a younger brother. I went to college at USC (the REAL USC) where I joined Delta Zeta sorority, met my husband Paul, and majored in Nursing (and was involved in LOTS of student organizations). I graduated in 2005 and for the last 7 years I have worked at Palmetto Health Children's Hospital on the Adolescent floor. I LOVE my job!
Paul and I got married on December 8th, 2007 and we welcomed our first baby, a maltipoo named Franklin, in the summer of 2008...he's sure he's a person!

On December 17, 2009 our daughter Emerson Jane (Emmie) was born and on July 14, 2011 Ellison Rachel (Ellie) joined our family. Since Emmie was born I've worked part time, so just 2 days a week, and I love my schedule. I get to be a mom most of the time but I still get to work at the hospital and keep up my nursing license.

A little about me...I love college football (USC and UGA are my teams!), going to the pool and the beach in the summer, discovering new fun things to do and places to go with the girls (zoo, Edventure, Ft. Jackson waterpark, parks...we're always up for a good time) and hanging out with my friends! I also love sewing, doing crafts, and trying out new recipes...I just don't seem to have a lot of time these days to do these things!

Yummm...

So I recently joined a produce co-op through a mom I know from My Gym. Today I got my first box of produce and I'm soooo excited!

The thing I like about this co-op is that they tell you ahead of time what you're getting and you can substitute items if you don't want something. For the most part the items are local and while they're not all organic they have some things that are. In this week's box we got kale (I substituted sweet potatoes), corn, cauliflower (I substituted corn), lettuce (you got to pick what kind you want...I got romaine), potatoes (you got to pick what kind and I got sweet), tomatoes (I got a regular garden one), zuchinni, cucumber, lemons, limes, and vidalia onions. They have a small box that feeds 1-2 people and a regular box that feeds 4-6. I got the small one and I think that's probably what I'll get most weeks but we'll see. I also like that each time you order (every 2 weeks) they have a selection of other foods that you can pay extra to get. So this time I got organic carrots, red hoop cheese, apples, pineapple, strawberries, local honey, and green beans.

Tonight for dinner we had pork chops, grilled, fresh corn, and fresh green beans. It was oh so yummy! I am thrilled with the quality of the produce! For dessert we had our fresh cheese...a huge hit at my house!


On tomorrow's menu we have grilled chicken kabobs with pineapple on them and a salad with our fresh lettuce, tomato, and cucumber!
